The Longest Week Ever....
It’s been a long week…I’ve been working from home while entertaining a rambunctious 19 month old, staying up-to-date with the latest and greatest news regarding the virus that is taking over the US and still feeling the need to provide some normalcy within my family by making healthy food and keeping positive chatter at the table. The unknown and uncertainty weighs heavy on my mind and I am sure yours as well. I like to be positive and even my own mother calls me Polly Anna but I can’t quite shake the uneasiness I feel...
As a dietitian, I can recite all the immune boosting foods by heart, write a book on proper hand washing techniques…cue singing the ABCs not just once but twice and even teach you how to make a well-balanced meal out of 3 ingredients. What I can’t give you is peace of mind, but I can tell you that doing something you love can lift your spirits in more ways than one.
For me my happy place is anytime I am in my kitchen cooking or baking. This afternoon was no exception and I was in desperate need for something to satisfy my sweet tooth. After canvasing my pantry, fridge and freezer I decided to make cookies…but not just any ordinary cookies. These were lentil chip cookies dunked in dark chocolate…is your mouth watering yet. These simple 6 ingredient cookies are nut free and can easily be made dairy free if you swap out the butter for a plant based alternative. A special thanks to EnjoyLife foods for sending me free product and inspiring me to be creative and use these lentil chips in a unique way!

To make these sweet and savory cookies you will need:
1 cup butter, softened
½ cup sugar
½ tsp. vanilla extract
1 ¾ cup flour
¾ cup crushed Enjoy Life Lentil Chips
½ bag Enjoy Life Dark Morsels
To start this recipe, pre-heat your oven to 350 degrees. Then add the softened butter, sugar and vanilla in a large mixing bowl and mix together until ingredients are creamy and well combined. I find the easiest way to soften butter is to take it out about 1 hour before I start baking and set it on the counter to soften but if you are in a pinch place the butter in the microwave for 15 seconds and then repeat until softened.

Next slowly add flour to the mix. Be careful not to pour too much flour into the mix as it will spill out and you will have a huge mess that both you, your kids and your dog will be dragging through the house. Mix well until all the flour is nicely incorporated into your dough.

It is now time to set your dough aside and turn your attention to the lentil chips. Enjoy Life’s Lentil Chips are made with plant-based, protein-filled lentils that provide 3g of protein per serving. These chips are an allergy friendly alternative to traditional chips that everyone will love… even a sweet 19-month-old little girl approves…

Take a handful of chips and place them in a disposable or reusable bag and using a rolling pin crush into tiny pieces. I personally used my meat mallot today as I needed a little stress relief therapy.

Remove the lentil chips from the bag and gently fold the chips into your dough.

Take a non-stick baking sheet and grease with olive oil or avocado oil and using a spoon, drop a tablespoon size of dough onto the baking sheet. Once the baking sheet is full, place in the oven and bake for 12-15 minutes until the edges are slightly brown.

Allow cookies to completely cool on a baking rack before dipping into the dark chocolate

Place ½ bag Enjoy Life Dark Morsels in a microwave safe bowl. Microwave for 30 seconds and then stir, repeat until all chips are melted. Take cooled cookie and dip into the melted chocolate covering half of the cookie.

Allow to cool and then devour!
